Join Adrian Blomfield acclaimed chef & member of the award-winning BBQ Team, Double Barrel BBQ for his Brisket & Ribs Charcoal Class. This is a rare opportunity for the BBQ lover to learn how to cook the perfect brisket & ribs every time using only the very best Weber BBQ’s.
The award-winning BBQ team master will chat all things charcoal cooking, fire management and fuel selection, meat selection, trimming, brining & rubs. Here's your chance to learn tips & tricks you won’t get anywhere else. We will be cooking on Weber Kettles, a 47cm Smokey Mountain and the SmokeFire Pellet Grill.

Menu
- Prime Angus or Wagyu Brisket.
- Beef short Ribs, smoked over Pecan until probing like butter.
- St Louis Pork ribs proudly supplied by SunPork smoked over Cherry wood then wrapped with butter and maple syrup until tender. The ribs are sauced and flashed through the smoker to set the sauce.
- Lamb ribs smoked over charcoal and Apple wood.
Content
- Brisket selection grass versus grain, Angus versus wagyu. Aging and marbling etc.
- Trimming - full competition trim to catering trim.
- To inject or not to inject. What to use and why. Flavoured injections right through to using phosphates and flavour enhancers like MSG and 635.
- We look at the processes of dry brining a brisket and what the benefits are.
- Rubs and seasoning methods. Learn how to achieve that all important “bark.”
- Firing your beast up. We look at the best and quickest ways to bring your beast up to the right cooking temperature.
- Wood/Pellet selection. Matching the woods to the meat.
- When to wrap or not to wrap your brisket/ribs.
- When and how to use Glazes and sauces to enhance the flavour.
- How to know your brisket is cooked to perfection.
