We source all our seafood from local suppliers!

- Where to source your seafood from and to store and care for it.
- Cleaning and trimming your seafood to get maximum return.
- We look at the processes of brining your seafood and what it’s benefits are.
- Rubs, marinades and seasoning methods. Learn how achieve that all important flavour.
- Firing your beast up. We look at the best and quickest ways to bring your BBQ up to cooking temp.
- Wood selection or pellet selection. We will teach you the best woods for flavour.
- Selecting the right method of cooking (indirect or direct, smoke or no smoke etc)
Not only will you learn the secrets to perfecting low and slow barbecue, but you will also get to EAT all the delicious food we cook together!
